Love at First Sight
I said I’d be happy if I got one strawberry. The strawberries wanted more for me.
So much fun strawberry symbolism, but “love at first sight” takes the cake for me. And speaking of cake — in celebration of my little home grown babies, here’s the recipe to an all time favorite. It’s Sprinkles’ Strawberry Cupcakes, tweaked to my satisfaction — a little more sugar, a lot more strawberries, and as always salted butter.
Ingredients
6 cups whole strawberries
3 cups all-purpose flour, sifted
2 teaspoons baking powder
1/2 teaspoon coarse salt
1/2 cup whole milk, room temp
2 teaspoons vanilla extract
1 cup salted butter, room temp
2 cups sugar
2 large eggs, room temp
4 large egg whites, room temp
